Fried rice/baghara rice/बघारे भात /बघरा चांवल

Fried rice/baghare bhaat:How to use leftover rice is the most common question in every household.
In Chhattisgarh Baghare Bhaat is the most common morning breakfast,which satisfied the taste buds and the easiest way to use the left over rice from night.

Ingredients:
Cooked rice : 1 big bowl
Onion : 1-2
Tomato-1 
Green chili or red chili powder  -1 (optional) 
Cumin seeds-1/2 table spoon
Salt - As per taste
Turmeric Powder-1/2 table spoon
Oil-2-3 table spoons
Curry leaves (if available)


Fried rice/baghare bhaat recipe:

1.Cut the onion,green chilies and tomatoes.
2.Take 2-3 table spoons of oil in a pan and heat it.
3.Add cumin seeds,green chili ,curry leaves and onion and let them fry .
4.Once onion turning brown and soft ,add chopped tomatoes and cook them for some time in medium flame.
5.Once tomatoes are soft add salt,turmeric powder and blend them nicely.
6.Add left over cooked rice in the onion mixture and stir them gently .Leave it for some time  in low flame.
7.Fried rice or Baghara bhaat is ready to serve.

१ प्याज़ ,हरी मिर्च ,१ टमाटर को काट लें। अब एक कड़ाई में १-२ छोटे चम्मच तेल गरम करें। उसमें जीरा ,कटी मिर्च ,कटे प्याज़ और मीठा नीम पत्ता (यदि उपलब्ध हो तो) डालें। जब प्याज़ हलकी भूरी होने लगे तब कटे हुए टमाटर डाल कर साथ में पकाएं।  थोड़ी देर बाद नमक,हल्दी पाउड अच्छे से सभी को मिलाएं और थोड़ी देर पकने दें। अब इसमें पके हुए चांवल को डालें और मिलाएं। थोड़ी देर तक धीमी आंच में सेंक लें फिर गैस बंद कर दें। गरमा गरम बघारे भात का मज़ा लें।  
नोट : छत्तीसगढ़ में बघारे भात /बघरा चांवल सुबह के नास्ते में अक्सर खाया जाता है।  यह बचे हुए चांवल को दुबारा उपयोग में लाने का अच्छा तरीका है साथ साथ बहुत ही सरलता से कम समय में बनता है।

Wild Amaranth is very nutritious plant . You can see them very easily among weeds.In India and some part of the world ,people cook its leaves.It mostly comes in summers so it creates the good alternate for other leafy vegetables like spinach.
 In Chhattisgarh people love cooking, its stem as well as roots as curry with pulses,curd or dry recipe.

Ingredients:
A bundle of Wild Amaranth sticks
Mung or udad (Gram) badiyan
curd-500 ml
salt-as per taste
turmeric -1/2 table spoon
mustard seed-1/2 table spoon
Full Green or Red Chilies-2-3
Coriander powder-1/2 table spoon
Cumin Powder-1/2 table spoon
Red Chili powder-1/2 table spoon
Curry Leaves
Tomatoes-1



Preparation of Kheda(Jari or wild Amaranth) with small gram badi (wadi) recipe:

Preparation of Kheda(Jari or wild Amaranth):

1. Take a bundle of kheda (jari) and pluck all the leaves.
2.Now remove the rough layer of roots of kheda with the help of knife or scrapper.
3.Once the roots are clean then cut the whole stem into the equal pieces.
4.Wash the pieces thoroughly .
5.Take 1-2 table spoon of oil and heat it . Fry the little quantity of gram badiyan (wadiyan) in the oil and keep it separated
6.Take kheda (jari) pieces in a cooker with fried badi, pour little water and spread some salt on it.Now give 2-3 whistles and wait till the pressure of the cooker come down.

Preparation of curd for the recipe :
In a grinder take 500 ml curd,add  1-2 spoon gram flour ,pour some water (200ml),add coriander powder,cumin powder,turmeric,red chili powder and little salt  .Now start stirring or grinding the curd so buttermilk or thinner consistency of curd gets ready .

 Kheda(Jari or wild Amaranth) : 
1. Take 2-3  table spoon oil in the pan again .
2.Add mustard seed , curry leaves and 2-3 full red/green chilis
3.Mix 1 chopped tomato  and add salt  in the mixture.
4.Let it cook for some time . Add coriander powder ,turmeric powder and little salt in it.
5.Once you see that tomatoes are cooked and blended with ingredients then add boiled, kheda or jari pieces(Wild Amaranth) and badi .
6. Gently stir the whole mix,cover the lid and let it cook for 5 minutes.
7.Slowley when kheda(Jari) and badi are nicely mix with tomatoes and other ingredients then add  curd, which we have kept ready.
8.Cover the lid and let the curd reach till its boiling point.Cook for next 5-7 minutes in medium flame .
9.Switch of the flame, Kheda(Jari or wild Amaranth) with badi  recipe is ready to serve with steamed rice or hot chapatis.

Note: Kheda/jari or wild Amaranth is one of the nutritious plants and whole plant is used as food in Chhattisgarh.This Native American plant(https://www.gardenista.com/posts/weeds-you-can-eat-wild-amaranth/) is very popular among people of Chhattisgarh. 7.Add coriander powder ,turmeric powder and little salt.
Add masala mix with tomatoes 














8.Add boiled, kheda or jari pieces(Wild Amaranth) and badi,gently stir the whole mix,cover the lid and let it cook for 5 minutes.















9.Add  curd, which we have kept ready.Let the curd boil for sometime with the cooked vegetables.

11.The kheda and badi recipe is ready to serve.

सबसे पहले खेड़ा या जरी से पत्तों को अलग कर लें।  फिर खेड़ा /जरी के नीचे जड़ वाले हिस्से को चाकू से साफ़ करें। अब पुरे खेड़े को छोटे छोटे टुकड़ों में काट लीजिये।काटने के बाद टुकड़ों को अच्छे से धो लें।
अब एक कड़ाई में १-२ छोटे चम्मच तेल गरम करें और उसमें छोटी मुंग या उड़द की बडियों को थोड़ा तल कर निकाल  लें।
एक कुकर में तली हुई  बडियों और कटे हुए खेड़े/जरी को ले, बहुत थोड़ा पानी और नमक डाल  कर २-३ सीटियां  लगाएं। और कुकर का प्रेशर ठंडा होने का इंतज़ार करें।

एक अलग बर्तन में 500gram दही लें और पानी मिला कर पतला कर लें. उसमें २-३ स्पून बेसन मिलाये और थोड़ा नमक,हल्दी पाउडर,जीरा पाउडर ,धनिया पाउडर मिलाएं।  अब इसमें थोड़ा पानी डालकर ग्राइंडर में थोड़ा चला लें या फिर मथनी से मथ कर  मठा तैयार कर लें।

एक कड़ाई में २-३ छोटे चम्मच तेल ले कर गरम करें ,उसमें  सरसों के दाने,मीठी नीम पत्तीयां, २-३ हरी या लाल खड़ी मिर्ची डाल कर पकाएं और कुछ देर बाद कटे टमाटर डाल कर पकने दे।  थोड़ी देर बाद नमक,हल्दी पाउडर,धनिया पाउडर डाल कर टमाटर को अच्छे से पकने दें। जब थोड़ा तेल ऊपर दिखने लगे तब कुकर से उबले हुए खेड़ा या जरी और बडियों को टमाटर वाले मिश्रण में डाल  कर अच्छे से मिलाएं और थोड़ी देर ढक  कर पकने दें।
५-७ मिनट पकने के बाद ढक्कन खोले और तैयार किये हुए मठे (दही) को डाल दें। और पकने के लिए छोड़ दें।
जब दही में  १-२ उबाल आने तक इसे पकाएं। थोड़ी देर बाद गैस बंद कर दें।

नोट : खेड़ा या जरी बहुत पोषक पौधा होता है जिसका हर एक हिस्सा खाने में लाया जाता है। यह अमेरिका जैसे देशों में भी काफी प्रचलित है।  खेड़ा भाजी छत्तीसगढ़ में काफी पसंद किया जाता है। जिसकी रेसेपी हमने पहले बताई है। यह जरी के नाम से भी जाना जाता है ,जिसका अर्थ होता है "जड़"
