Boda/बोड़ा


Boda is a root & eaten mainly in bastar (southern part of Chhattisgarh) .The preparation is little tedious.

Ingredients : Boda,onion,ginger garlic paste ,tomato paste, water, oil, salt, turmeric, chili powder, coriander powder

Boda is taken out inside from the earth .so it is covered completely with soil.

Soak in water & wash many times the outer layer. Now pel off the out cover & collect the inner round shape part. On requirement basis you can cut into two parts.

Grind or fine chop 2-3 onions ,take  garlic paste or fine chop garlic cloves, prepare tomato paste.

Heat the oil a pan n put onion garlic paste in it .once paste start changing the color mix tomato paste in it. Cook the paste for some time until water evaporate .Now add salt, turmeric, chili powder, coriander powder and cook until oil comes in the sides. Add boda in it,mix with  coocked paste  and cover for some time. After  5-10 mins add some hot water and transfer whole mixture in the cooker. Switch off the flame after 3-4 Whistles.One can enjoy it with steamed rice or ghee roti.
 
 : Boda is nod like structure which is grown on its roots .Its rich in minerals & carbs .Mostly found in forest.It is popular in bastar and near by region.
 
पहले बोड़ा  को अच्छी  तरह से पानी में धो लें।  फिर उसके ऊपरी मिटटी वाले परत को निकाल लें। और अंदर के गोल हिस्से को २ टुकड़ों में काट लें।  अब २-३ प्याज़ ले कर या तो बारीक़ काट ले या फिर पीस लें।  अब एक कड़ाई में तेल गरम करें और उसमें प्याज़ का पेस्ट डाल के भुने १/२ चमच्च लहसून अदरक का पेस्ट डालें और भुने। थोड़ा भून जाने पर टमाटर का पेस्ट डाल दें और अच्छे से भुने जब मसाले से तेल ऊपर आने लगे तब नमक ,हल्दी पाउडर,धनिया पाउडर ,मिर्ची पाउडर फिर थोड़ी देर भून लें।  अब इसमें बोड़ा  डाल  कर अच्छे से मिलाएं और डांक कर पकने दें।  थोड़ी देर बाद ढक्कन खोलें और गरम पानी डाल कर अच्छे से मिलाएं और एक उबाल आने तक पकने दें। अब गैस बंद करें और इसे कुकर में डाल कर ३-४ सिटी दें।  थोड़ी देर बाद कुकर खोलें और गर्म चांवल के साथ बोड़ा का मज़ा लें।
टिपण्णी : बोड़ा सामान्यतः जंगलों में पाया जाता है। यह गाँठ जैसी रचना खनिज लवण से भरपूर और कार्बोहायड्रेट से भरपूर होती है।यह छत्तीसगढ़ के बस्तर और आस पास की जगहों में ज्यादातर खाया जाता है।

    1. Boḍa is like a mushroom only. Or belongs to mushroom family (I am not sure) which is found during monsoons in southern part of Chhattisgarh. Looks hideous but tastes really good.
