Khaja/खाजा



Ingredients:
 Maida,oil,water,sugar,cardamom

Take maida and sieve it. Add oil or ghee for the crispy preparation, add hot water and make a soft dough out of it and leave the preparation for 1-2 hrs.

Now start rolling the small balls of dough and prepare big, thin and round chapatti out of it.

Now cut the chapatti in horizontally into 4-5 columns and fold 3-4 times to each column.

Once its ready take a pan and heat the oil on the flame. When, oil is hot start frying those folded maida coils. 

Fry it nicely until it gets golden brown.

Once folds are fried start work for thick sugar syrup.
you have to take an equal amount of water and sugar with 3-4 cardamom, let it heat till both get mingle well.

Once the syrup is thick enough turn off the heat and start spreading syrup on the brown folds with the help of a spoon.
once syrup get settled on the folds you can serve mouth-watering khaja which will melt inside your guest's mouth  J
एक बर्तन में आवशक्ता अनुसार मैदा लें और  मोअन के लिए तेल या घी मिलाकर अच्छे से गरम पानी डाल कर गूँथ लें।  गुंथे हुए मैदा को १-२ घंटे के लिए छोड़ दें। छोटे छोटे  मैदे  की गोलियां बनाकर रखे और उन्हें पतली पतली बड़ी चपातियां बनायें।  चपाती को ४-५ स्तंभो में काट लें और हर स्तंभ को २-३ बार मोड़ लें। अब एक कड़ाई में तेल गरम करें और बने हुए खाजे को हलके भूरे होने तक तल लें।  जब तलने का काम खत्म  हो जाए तब शक्कर की गाढ़ी चासनी बनायें इसके लिए सामान मात्रा में पानी , शक्कर और ३-४ इलाइची लें   तब तक पकाये जब तक दोनों अच्छी तरह से घुल कर गाढ़ी चासनी न बना ले. गरम चासनी को खाजे के ऊपर चम्मस कि सहायत से फैलाएं।  अब खाजे कि चासनी को सुखने दें। जब सुख जाए तब मुलायम खुसखुसे खाजे को परोसें और मुह में घुलने का मज़ा लें J
