Bijori/बिजोरी


Bijori
Ingredients : 

Black lentils-1/2 kg

Salt,

Water,

Coriander powder,

Red chili powder

White sesame- 1 kg (white)


Recipe :

For making this Chhattisgarh Recipe First ,wash &  soak the black lentil for  8-12 hours.

Once lentils are soaked properly, fine grind it.

Now wash 1 kg of sesame seeds thoroughly and strain the water .

Mix the lentils paste  with the  white sesame (remember the quantity of sesame seeds will be doubled than the lentil.) with salt,coriander powder and red chilies.

Whip the batter till it gets very smooth.

Making this traditional Chhattisgarh recipe of Bijori is incomplete without using "Parra"(the wooden tray) .
Spred the wet cotton cloth on it.

Now , Make small balls from the  batter and put it on the cotton cloths.

Now slightly press the balls and convert them into flat disc  . 

Put the cloth on the open sun and let it dry for 2-3 days , after 2-3 days change the sides and again dry them for few days.

Note : Bijori is kind of snacks which usually serves with the meal as side dish.This Chhattisgarh Cuisine is healthy snacks option too.

काली उड़द दाल को ८ -१0 घंटे तक भींगने दें और बाद में बारीक़ पिस लें .इस पेस्ट को दाल में मिलकर नमक,धनिया पाउडर,मिर्ची पाउडर  और सफ़ेद तिल  मिलाकर अच्छे   से फेंट लें .अब एक सूती के कपडे पर दाल की गोलियां बनायें और उसे चपटा  करते जाएँ .अब इसे २ -३ तक सूर्य की रोशनी में सुखने दें .उसके बाद जब थोडा सुख जाए तब दुसरे तरफ पलट दें और  कुछ दिन तक अच्छे से रौशनी में सुखने  दे 
बिजोरी खाने के साथ परोसी जाती है और सालो तक रखी जा सकती है .
