Thethari /बेसन की ठेठरी



Ingredients:

Gram flour 2 bowls,
Rice flour 1 bowl,
salt
anjwain or cumin seeds,
oil,
Red chili powder
Turmeric powder


Method :

Mix gram flour and rice flour in 2:1 ratio
Add warm Dalda or oil for moyan anjwain or jeera , red chili powder, turmeric powder, salt and mix them well.
Add little warm water to knead the flour and prepare a tight dough.
Once the dough is ready to leave it for some time. Now break dough in small pieces.
Now take a drop of oil on the rolling pad and roll the dough pieces with the help of your palm.
The dough looks like a thick string, turn it into the coil shape.
Once all dough pieces are ready, heat the oil in a pan.
 Start deep frying the coils and keep changing the sides.
Once coils turn golden brown take them out and let it get cold for some time.
Enjoy this traditional snacks during tea time. It lasts for many days.

Note :Thethari is a traditional chhattisgarh food ,which consists goodness of rice and gram flour.This chhattisgarh cuisine is easy to make and soaks very less oil. This chhattisgarh recipe is prepared during most of  the festival of region.

बेसन और चावल का आटे को २ :१ के अनुपात में ले और मोयन के लिए डालडा या तेल  ,जीरा ,मिर्च पावडर या अन्ज्वैन, स्वादानुसार नमक और हल्दी पाउडर  मिलकर अच्छी तरह से कड़ा मिश्रणतैयार करें.
अब गुंथे हुए आटे से छोटी छोटी लोइयन बनाये और लोइयों से रिंग की तरह आकर तैयार करें. अब कड़ाई में तेल गरम कर इनको कुरकुरे सेकलें .इस पारंपरिक नास्ता का मज़ा आप चाय या काफी के साथ ले सकते हैं मुखयतः ठेठरी होली पर बनाई जाती है .ठेठरी बहुत दिनों तक रखी जा सकती है.
