The State of Chhattisgarh is known as rice bowl of India and follows a rich tradition of food culture .The Food preparation falls in different categories . Most of the traditional and tribe foods are made by rice and rice flour , curd(number of veg kadis) and variety of leaves like lal bhaji,chech bhaji ,kohda , bohar bhaji. Badi and Bijori are optional food categories also Gulgula ,pidiya ,dhoodh fara,balooshahi ,khurmi falls in sweet categories.

Fara (फरा)

फरा-छत्तीसगढ़ पारम्परिक व्यंजन

Fara /फरा


Steamed rice,
Rice flour,
Til(white sesame seeds),
red/green chills,
curry leaves,
Cooking oil


Take leftover rice and add 3-4 tablespoons of Rice flour.

Add some salt (as per taste) in it.  

Now take half a cup of warm water and start kneading the rice mixture gently.

The softness of rice may create trouble during the kneading process.

Rice Dough is ready to use.

spread oil on your palm.

Take small pieces of rice dough.

Start rolling the rice dough in finger shape with help of your palm.

Take Garlic pieces, Red chilies, mustard seeds, curry leaves, sesame seeds for seasoning.

Seasoning-Indian food culture

Take 2-3 spoons of cooking oil in a pan and spread the oil evenly.

Once the oil is hot, start seasoning with mustard seeds, Sesame seeds, red chilies, curry leaves
garlic pieces and mix it well.

Now add little water in it and sprinkle some salt.

Now immediately add all uncooked Fara in hot water with seasoning and cover it.

After 5 minutes open the lid and check the cooked Fara.

Once you find Fara is cooked, turned it gently and leave it to cook for some more time.

Crispy Fara (Rice fingers) is ready.

Enjoy with green chutney or pickle. 

Note: Fara is an authentic Chhattisgarhi snack, which is easy to make and less time-consuming. It is rich in energy and also considered as gluten free recipes.

फरा बनाने के लिए सबसे पहले बचे हुए पके हुए चांवल को ले ,उसमें ३-४ छोटे चम्मच चांवल का आटा मिलाएं।  अब एक कप में गरम पानी ले।  और चांवल के मिश्रण में गरम पानी डाल कर गूँथ लें।  अब हथेलियों में थोड़ा तेल फैलाएं और छोटी छोटी लोइयां तोड़कर हथेलियों के बीच आकर दें।  जब सारा आटा लंबी उँगलियों के आकर में बदल जाये तब थोड़ा सरसों दाना ,सफ़ेद तिल ,साबूत लाल मिर्च ,लहसून के टुकड़े और मीठी नीम पत्ता डाल कर तड़का दें और ऊपर से थोड़ा पानी डालें ,नमक स्वादानुसार मिलाएं और तुरंत ही तैयार किये हुए फरों को मिला दें। तुरंत ही ढंके और कुछ समय  पकने दें।  ५ मिनट पश्चात् ढक्कन खोलें और फरों को पलट कर पकने दें। अगले ५ मिनट तक फरों को मध्यम आंच में पकने दें और कुरकुरा होने तक सेंके. गरमा गरम कुरकुरे फरे  तैयार है। इन्हे हरी चटनी या आचार के साथ खाएं। 

नोट : फरे छत्तीसगढ़ी पारम्परिक व्यंजन है जिसे सुबह नाश्ते पर या दोपहर में चाय के साथ खाया जा सकता है।  यह शक्ति से भरपूर और जल्दी बनने वाला खाना है। यह ग्लूटेन फ्री रेसिपी में अच्छा विकल्प हो सकता है।
