Chech bhajji / चेच भाजी


Chech Bhaji -Chhattisgarh Recipes

















Ingredients:

Chech bhaji (white or  red),
Small badi  (udad or mung lentils balls),
Red chili, 
Garlic,
Salt

Chhattisgarh Recipes Chech Bhaji -

Pluck the leaves from the branches and thoroughly wash the Chech bhaji 2-3 rounds in a bucket full of water.

Heat the oil in a pan, put 2-3 red chilies , chopped garlic pieces and small udad or mung badi .

Add a small amount of water in it and transfer the washed leaves (do not cut the leaves in small pieces)  in the pan. Mix them well and sprinkle the salt as per taste.

 Now cover the pan and cook the check bhaji for another 5-10 mins. In the process, you will see that a lot of water will come out from the leaves, cook until all the water gets evaporated and bhaji becomes dry.

 Chech bhaji is ready to serve. Chech bhaji is a great combination with rice, daal or rice, kadi . Surprisingly in this traditional preparation, we do not finely chop the leaves.

Note : Among chhattisgarhiya, chech bhaji is one of the favorite bhajis.

चेच भाजी की पत्तियों को शाखाओं से अलग कर लें।  जब पत्तियां तोड़ ले उसके बाद अच्छी तरह से पानी में भिगो कर धो लें। अब एक कड़ाई में तेल गर्म करें।  उसमें लहसुन के कटे टुकड़े ,२-३ लाल मिर्च और छोटी मूंग या उड़द की बड़ियाँ डाल  कर भुने।  अब थोड़ा सा पानी डालें और पत्तियों को कड़ाई में डालें , स्वाद अनुसार नमक डालें और ढक्कन से ढक  दें।  भाजी से पानी निकलने लगेगा। भाजी को तब तक पकने दें जब तक सारा पानी वाष्पीकृत न हो जाए। जब भाजी सुख जाए तब  गैस बंद कर दें और गरमा गर्म चावल ,दाल के साथ परोसें।
